Ingredients
  • 240 g Fresh salmon fillets
  • 100 g Basmati rice
  • 40 g Dried Apricots
  • 100 g Frozen sliced red onion
  • 40 g Tikka
  • 100 g 0% Greek Yoghurt
  • 100 g Pomegranate seeds
  • 1 teaspoon Turmeric

  • 40 g Dried Apricots

  • 100 g 0% Greek Yoghurt

Instructions
  1. Add yoghurt & 20g curry pasta to a container with space for the salmon fillets, marinate fillets for as long as possible, overnight is best!
  2. Heat a deep saucepan on a medium heat with a little cooking spray/oil, fry onions for 5 minutes, add remaining curry paste & cook for 1 minute
  3. Add in turmeric, rice, apricots & 600 ml hot water, bring to a boil & simmer for 15 minutes
  4. Stir, cover pan with a lid and turn heat right down & leave for a further 15 minutes
  5. Stir, lay marinated fillets on top, cover & leave on lowest heat for 20 minutes
  6. Dish up and top with pomegranate seeds and some fresh coriander leaves
